Recipe Ingredients for Cabbage Soup

2 tablespoons olive oil or vegetable oil
2 leek leeks
2 medium onions, diced
2 tablespoons chopped garlic
4 c chicken stock
2 c water
2 large carrots, sliced
1 teaspoon caraway seeds
2 small potatoes, peeled and diced
4 c shredded cabbage
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 c chopped parsley
1 T blue cheese, crumbled

Recipe Directions for Cabbage Soup

  1. Heat olive oil in a soup pot over medium-low heat. Add leeks, onions, and garlic, stirring until tender but not browned, 5 to 10 minutes.

  2. Stir in chicken stock, water, carrots, and caraway seeds.

  3. Bring to a boil, and then stir in potatoes. Reduce the heat and simmer until the potatoes are cooked, about 15 minutes.

  4. Stir in cabbage. Continue to simmer until the cabbage is wilted, about 15 minutes, adding a little water, if necessary.

  5. Stir in salt, pepper, and parsley.

  6. Ladle into warmed bowls. Sprinkle each serving with cheese.
