This is a modification of Good Housekeeping's Cabbage Soup Diet Recipe. It makes a lot and freezes well.

Recipe Ingredients for Cabbage Soup

1 lb Carrots
3 med onions
4 stalks celery
2 cloves garlic
12 oz spinach
1 (283g g) green beans
1588 g (794g g) Tomatoes Diced No Salt Added
6 cups low sodium chicken broth
1/2 head cabbage
283 g mushrooms
6 cups water
1 Salt & Pepper

Recipe Directions for Cabbage Soup

  1. Over medium-high heat sautee carrots, onions, celery and garlic for 8 minutes or until vegetables soften.

  2. Add tomatoes with their liquid. Add cabbage, greans beans, broth, water, salt & pepper.

  3. Heat to boiling, stirring occassionally.

  4. Reduce heat to low, cover and simmer for 10 minutes, stirring occassionally.

  5. Increase heat to high, stir in spinach and heat to boiling again.

  6. Reduce heat to low, cover and simmer 10 minutes or until all vegetables are tender.
