Recipe Ingredients for Cabbage Soup

1 head cabbage
6 carrots
6 medium onions
6 green onions
2 red peppers or 2 green peppers
3 large tomatoes
5 stalks celery, trimmed
1/2 cup brown rice
1 salt to taste
1 black pepper to taste

Recipe Directions for Cabbage Soup

  1. Cut vegetables into bite size pieces

  2. Place in large stock pot and cover with water

  3. Bring water to a boil and simmer uncovered for 10 minutes

  4. Cover and simmer until the vegetables are soft, about 45 minutes

  5. Meanwhile, cook the brown rice according to package directions

  6. Add the rice to the soup when the vegetables are almost cooked

  7. Season with salt and pepper

  8. Allow the soup to cool before storing in refrigerator
