Cabbage Soup Recipe

Low-cal detox soup. You can add turkey or beef meatballs to make this a meal.

Recipe Ingredients for Cabbage Soup

1/2 head green cabbage, chopped
2 onions, chopped
4 cloves garlic, smashed
3 stalks celery, chopped
1 1/2 large carrots, chopped
900 ml low-sodium chicken broth
16 oz stewed tomatoes
4 cups water
1 cup barley
1 tsp coconut oil
1/2 green pepper, chopped

Recipe Directions for Cabbage Soup

  1. In a large soup pot, heat coconut oil on med-high heat.

  2. Chop garlic and set aside. Add onions, celery, carrot and green pepper. Saute until coated with oil.

  3. Add garlic and cabbage. Heat through until the cabbage starts getting soft.

  4. Add tomatoes and use spoon to break up the tomatoes. Add chicken broth. Bring to a boil.

  5. Use a large wooden spoon to further break up the tomatoes and stir the soup.

  6. After about 10 minutes, add the water to the pot. Bring to a boil again.

  7. Rinse and add barley, return to a boil if needed. Let simmer until the barley is cooked.
