Recipe Ingredients for Cabbage Soup

1 tbsp olive oil
1 med onion
1 carrot, chopped
4 garlic cloves
1 red bell pepper, chopped
28 ounces tomatoes, diced
8 cups chicken broth, low sodium
2 cups water
1 head cabbage, thinly sliced

Recipe Directions for Cabbage Soup

Heat a large saucepan over medium-high heat. Add oil, then onion; cook 5 minutes, stirring occasionally. Stir in carrot, garlic, and bell pepper; cook until tender. Add stock, tomatoeds, water, and cabbage; simmer uncovered 20 minutes. Season to taste with hot sauce and salt and pepper .
