Recipe Ingredients for Cabbage Soup

2 T olive oil
2 leeks, white part, chopped
2 medium onions, diced
2 T garlic, chopped
4 c chicken stocks
2 c water
2 large carrots, sliced
3/4 t caraway seeds
2 small potatoes, peeled and diced
4 c cabbage, shredded
1 t salt
1/4 t black pepper
1/4 c parsley, chopped

Recipe Directions for Cabbage Soup

  1. Heat olive oil in a soup pot over medium heat. Add leeks, onions, and garlic. Stir until tender, but not browned, 5 to 10 minutes.

  2. Stir in chicken broth, water, carrots, and caraway seeds. Bring to a boil and stir in potatoes.

  3. Reduce the heat and simmer until the potatoes are cooked, about 15 minutes.

  4. Stir in the cabbage. Continue to simmer until the cabbage is wilted, about 15 minutes, adding a little water to cover, if necessary.

  5. Stir in salt, pepper, and parsley.

  6. Ladle into warmed bowls. Sprinkle with bleu cheese, if desired.
