Recipe Ingredients for Cabbage Soup

2 medium yellow onions
1 green bell pepper
3 carrots
3 stalks celery
1 tbsp canola oil
14 1/2 oz Del Monte diced tomatoes, no salt added
2 cups mushrooms
3/4 head of white cabbage
16 oz beef broth (low sodium)
4 cups Low Sodium Tomato Juice (V8)
2 tbsp soup, dry powder (Lipton onion)
4 cups water
3 cloves garlic (chopped)
1 tsp pepper
3 tablespoons parsley
1/2 tsp. cayenne pepper

Recipe Directions for Cabbage Soup

  1. Saute in a 7 or 8 quart pot onions, bell pepper, carrots, celery & canola oil together.

  2. Add the rest of the ingredients & cook for approx. 2 hours or until the cabbage & vegetables are tender.
