A light, yummy, low calorie soup.

Recipe Ingredients for Cabbage Soup

46 oz V8 juice
14 1/2 oz tomatoes, diced
1 cup celery (approx. 6 medium stalks), diced
6 cups cabbage (approx. 1/2 medium), diced
1 cup onion, diced
1 1/2 cups carrots, diced
2 cups green peppers (approx. 2 medium), diced
1 packet onion soup
14 oz beef broth
1 beef bouillon cube
1 tsp garlic powder
1/2 tsp black pepper

Recipe Directions for Cabbage Soup

  1. Chop and dice veggies.

  2. Add all ingredients into a large stock pot.

  3. Add water if necessary to bring liquids to almost twice the depth of the veggies in the pot. Bring to a boil, and stir as needed.

  4. Cook on low heat for about 2 hours, or until all the veggies are soft.

  5. Add other seasonings such as curry, parsley, or any other spices or herbs to suit your taste.

  6. NOTE: You may substitute Low Sodium V8 Juice and the resulting Sodium will be 321mg instead of 476mg per serving.

  7. Enjoy!
