Cabbage Salad Recipe

I got this recipe from greenlitebites.com this evening when I needed a dinner idea and didn't know what to make and didn't want to go to the store. The original recipe called for red onion, I used sweet. Also it called for 2 TBSP of apple cider vinegar and I accidentally doubled it. And it called for 1 tsp of thyme, but I didn't have any and didn't realize it until I got to that part. I also made my own bacon bits with maple bacon I had in the freezer.

Recipe Ingredients for cabbage salad

2 tsp olive oil
1/2 red onion
2 carrots cut into matchstick like pieces
1/2 head of cabbage
7 g real bacon bits
1 Kosher Salt
1/4 c. Apple Cider Vinegar
1 Fresh Black Pepper
1 tsp dried caraway seed
1 tsp dried rosemary

Recipe Directions for cabbage salad

  1. Heat the olive oil in a medium to large skillet over medium-high heat. Add the onion and cook until browning.

  2. Add the carrots (note: could add them earlier if you like them soft, I wanted them simply warmed to maintain their crunch,) cabbage, bacon bits, a liberal amount of salt?like 2 big pinch-fulls, and the vinegar.

  3. Using tongs intermingle the cabbage with the cooked onion being sure to rub the bottom of the skillet to deglaze a bit. Add the pepper and thyme tossing again. Cover and shut off the heat. Keep covered for 5 minutes then serve!
