My mothers recipe, tweaked a little bit to update. Even better reheated. Makes lots to freeze.

Recipe Ingredients for Cabbage Rolls

2 heads cabbage
64 ounces ground beef
32 ounces ground pork
474 grams white rice, cooked
1 cup onion, diced
1 1/2 tablespoons Italian seasoning
4 cloves garlic, crushed
3 eggs, slightly beaten
8 ounces tomato juice
284 ounces sauerkraut
4 ounces olive oil
1 cup onion, chopped
4 cloves garlic, crushed
14 ounces tomatoes with green chilies
28 ounces tomatoes, canned
84 ounces tomato juice
132 grams tomato paste
2 tablespoons brown sugar
1 tablespoon salt
1/2 cup cornstarch
3/4 cup water, cold

Recipe Directions for Cabbage Rolls

  1. Heat large kettle of water to boiling. Core cabbage heads and immerse in water one at a time, peeling off loose leaves as they soften. Cook 1 cup raw rice til al dente, 10 minutes (makes 3 cups cooked). Combine the chuck, pork, rice, onion seasoning, garlic, eggs and tomato juice (add rest of can to sauerkraut mixture) Mix well.

  2. In a large stock pot, heat olive oil and cook onion and garlic until tender, add all of the tomatoes (with juice), 1 large can tomato juice plus the tomato juice left from the hamburger mixture, tomato paste, brown sugar and salt. Bring to a simmer for 1/2 hour.

  3. Mix cornstarch with cold water and stir into sauerkraut mixture. Stir constantly till thickened.

  4. Meanwhile, cut a v-shape out of the cabbage leaf, removing the hard vein. Place 1/2 cup meat mixture in middle of leaf and fold sides in, roll from bottom and secure with a toothpick.

  5. Lay seam side down in a large roasting pan spread with a layer of the sauerkraut mixture. Continue layering with the cabbage rolls and sauerkraut mixture until all are covered with mixture.

  6. Cover and bake at 350 degrees for 1 hour.

  7. Makes approximately 42 cabbage rolls, 2 per serving.
