Recipe Ingredients for Cabbage Rolls

12 leaves green cabbage
2 onions
2 tsp smart balance oil
3 1/2 cups mushrooms
1 cup carrots, grated
6 garlic cloves
1/4 tsp thyme
1/2 tsp dill
1/4 cup parsley, fresh
1 tbsp lemon juice
2 tbsp lite soy sauce
1 tbsp miso
14 ounces firm tofu
12 ounces tomato juice

Recipe Directions for Cabbage Rolls

Boil cabbage for 5 minutes and remove 12 full leaves; let cool. In large skillet, saute the onions for 10 minutes. Add mushrooms, carrots, and garlic and cook, stirring often, for 3 minutes. Stir in the thyme, dill, and parsley and continue to cook until the mushrooms become soft and juicy. Add the lemon juice, soy sauce, miso, and mashed tofu and mix well. Preheat the oven to 350. Assemble the rolls and place in ungreased 9x12" baking pan. Pour tomato juice over top and bake for 20 minutes or until hot and steaming.
