From the St George cookbook; so much easier than making cabbage rolls! Can be made ahead and cooked the next day.

Recipe Ingredients for Cabbage Roll Casserole

1 lb ground beef
1 lb cabbage
2/3 c brown rice
28 oz diced tomatoes
1/2 c lemon juice
1 T salt
1 1/2 t black pepper
1/2 t garlic powder
4 t mint leaves, chopped

Recipe Directions for Cabbage Roll Casserole

  1. Preheat oven to 375.

  2. Cook brown rice (you need 2 cups cooked rice).

  3. Brown ground beef.

  4. Chop/shred cabbage - or use a 1-lb bag of slaw mix.

  5. Combine all ingredients in a large bowl; pour into ungreased 9x13 pan.

  6. Bake, uncovered, about an hour.
