A protein and fiberous carbohydrate soup. Easily frozen

Recipe Ingredients for Cabbage and Lentil soup

2 tbs. Olive oil
2 large Onions, diced
2 Carrots, diced
1 lb Lentils
5 cups vegetable broth
1/4 head of cabbage, diced
4 stalks of celery, sliced
2 cups water
1 clove Garlic

Recipe Directions for Cabbage and Lentil soup

  1. Heat oil in large soup pot

  2. Add onions, garlic and carrots

  3. cook over medium heat until onions are limp.

  4. Add all other ingredients and bring to a boil

  5. Lower heat and simmer for 30 minutes until lentils are very soft.

  6. Add more water as needed.
