Make it with either ground beef, ground turkey breast or ground chicken breast. To make it vegan use crumbled tofu.

Recipe Ingredients for Cabbage and Ground Beef/Turkey/Chick/Tofu Casserole

1 1/2 lb. chopped cabbage
16 ounces ground turkey breast, browned
1 medium chopped onion
14 oz. tomato sauce, no salt added
1/2 cup uncooked brown rice
14 ounces low sodium vegetable broth
1 Salt and pepper to taste

Recipe Directions for Cabbage and Ground Beef/Turkey/Chick/Tofu Casserole

  1. Mix all ingredients except broth together in large bowl.

  2. Transfer to 9x13 inches baking dish and pour broth over the top.

  3. Bake covered at 350 degrees for 60 minutes, then uncovered for 30 minutes (or until rice is cooked).

  4. If it starts to dry out before rice cooks, add 1/2 cup water over top and stir.
