You could easily serve this with Western-style sausages, hams, pork chops or any kind if roast pork meat, or try it with roast lamb or even duck and venison.

Recipe Ingredients for Cabbage, Fennel curried stir-fry

675 g green cabbage (1 1/2 lb, half a big head)
4 tbsp vegetable oil
3/4 tsp cumin seeds
1/2 tsp fennel seeds
1 tsp sesame seeds
200 g onion, peeled and cut, lengthways, into fine half rings
1 tsp salt
1/8 tsp chili powder
1 tbsp lemon juice
1/2 tsp curry powder, store-bought garam masala

Recipe Directions for Cabbage, Fennel curried stir-fry

  1. Remove the coarse outer leaves of the cabbage. If you have a cabbage half, cut it in half again, lengthways, then core the sections. Now cut each section, lengthways, into very fine, long shreds. A bread knife is ideal for this. (You could also use a food processor.)

  2. Put the oil in a wide, preferably non-stick, pan and set over high-ish heat. When hot, put in the cumin, fennel and sesame seeds. As soon as the sesame seeds begin to pop, put in the onions. Stir and fry for 3-4 minutes or until the onions have browned a bit.

  3. Put in the cabbage. Stir and fry for about 6 minutes or until the cabbage too has browned somewhat. Now put in the salt and chili powder. Turn the heat down to medium-low and cook, stirring now and then, for another -8 minutes or until the onions appear caramelized and soft. Add the lemon juice and garam masala. Stir to mix.
