Fresh, healthy, and incredibly easy to make, this salad is always a hit. Better yet, it takes even more flavorful days 2 and 3!

Recipe Ingredients for Cabbage Corn Tomato Lime Salad

1 fruit (2" dia) Limes
1 fruit (2-1/8" dia) Lemons
1/4 tsp Kosher Salt
1 pepper Habanero Chile
1/2 medium head cabbage Green Cabbage
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 large ear, raw Corn Sweet
3/4 cup Coriander Leaves

Recipe Directions for Cabbage Corn Tomato Lime Salad

  1. Cut the cabbage head in half or quarters. Peel off the outer cabbage leaves. Lay the cabbage sturdily on its side and then VERY thinly slice the cabbage to make thin ribbons.

  2. Shuck the corn (remove the hair and husk) and cut the bottom so it is flat. Cut the kernels off the ear with a knife.

  3. Chop the tomatoes into medium pieces.

  4. Wash the cilantro VERY well to remove all of the sand. Rip off most of the stems and then chop the leaves.

  5. Wash the chili pepper and then chop it into small pieces, being careful to wash your hands very well afterwards (or use gloves).

  6. In a large bowl, combine all of the vegetables. Squeeze the lime and lemon over the vegetables, catching any seeds from the lemon. Add the salt, and then toss to combine well and coat with the dressing.

  7. Place it in the refrigerator until ready to serve. Toss it well again before serving. You can keep this salad for up to 3 days.
