Cabbage-Chickpea Tomato Soup Recipe

Very tasty and filling recipe,any other vegetable can be added, this is what I had in my fridge at the time

Recipe Ingredients for Cabbage-chickpea tomato soup

700 g tomatoes,crushed
2 1/2 cups cabbage,chopped
1/4 cup leeks,chopped
5 scallions,medium
1 cup chickpeas,canned
2 tbsp brown sugar
1/2 l water

Recipe Directions for Cabbage-chickpea tomato soup

  1. Sautee leeks,onions and cabbage with some vegetable stock

  2. On a second burner, boil 1/2 l water (or you can substitute with chicken or vegetable stock)

  3. When the stock is boiling, add it to the sauteeing mixture and add the crushed tomatoes as well

  4. When that mixture is boiling add chickpeas, and boil it some more until cabbage and onions are soft.

  5. Add brown sugar and the seasoning of your choice (I add salt,oregano,Ms.Dash and some powdered garlic)
