Low carb casserole that can be used as a breakfast or brunch entree or a side dish.

Recipe Ingredients for Cabbage & Cheese casserole

14 oz Fresh Favorites Classic Cole Slaw
4 eggs
8 oz shredded cheese
1 c half and half
3/4 c chopped onions
3 T butter
2 serving Simply Enjoy Fra Diavolo Sauce

Recipe Directions for Cabbage & Cheese casserole

  1. In a large skillet, melt butter. Add onions and cole slaw mix and cover and cook until vegetables are soft - can brown a bit for extra flavor. Season with pepper to taste. Set aside.

  2. Preheat oven to 350F.

  3. In a large bowl, whisk together the eggs and half & half. Stir in the cheese. Stir in the cabbage mixture and mix well.

  4. Pour into a 9" square glass baking dish and top with the tomato sauce.

  5. Bake for about 1 hour.

  6. Let cool a few minutes before serving.
