All the vegan cabbage casserole recipes had mushrooms, and I hate mushrooms, so I subbed a green pepper.

Recipe Ingredients for Cabbage Casserole

1 1/2 lb cabbage, shredded
3 cups tomato sauce
1 cup brown rice
1 green pepper, chopped
1 1/2 cups water

Recipe Directions for Cabbage Casserole

  1. In a dry, nonstick skillet"fry" the rice until it's brown in color.

  2. Then put half of it in the bottom of a large casserole dish.

  3. Layer half of the shredded cabbage on top of it.

  4. Mix the water and the spaghetti sauce and then pour half of it over the cabbage.

  5. Spread half of the pepper over this.

  6. Then repeat your layers.

  7. Bake for about an hour in a 350 degree oven.
