Cabbage cooked with carrots and tomatoes

Recipe Ingredients for Cabbage with carrots

1 large yellow onion, chopped
3 Carrots
3 tbsp canola oil
1 head,+small+about+4-1/2"+dia cabbage
3 tomatoes, cut in wedges
1 tsp salt
1 tsp black pepper
1 cup parsley, chopped
3 tbsp bread crumbs
1 cup boiling water

Recipe Directions for Cabbage with carrots

Saute onions and carrots in the canola oil over medium heat. Add cabbage and salt and cook until cabbage is wilted. Add the boiling water, reduce the heat to low and cook 15- 20 min. Add tomatoes and cook about 15 more minutes. Turn off the heat; add bread crumbs (only if there is lots of liquid left), black pepper and parsley and mix well. Taste and add some more salt if needed.
