Recipe Ingredients for Cabbage and Carrot Cobbler -V A-

1 cup water
4 cups shredded green cabbage
1 cup grated carrots
2 onions, sliced
1 container soy yogurt, divided
1/2 teaspoon salt, divided
1/8 teaspoon black pepper
2 cups whole-wheat pastry flour
2 teaspoons baking powder
1 cup soy- or rice milk
2 tablespoons olive oil

Recipe Directions for Cabbage and Carrot Cobbler -V A-

  1. Preheat oven to 375F.

  2. Place water, cabbage, carrots, and onions in a large pot. Cover and cook over medium heat for 5 minutes. Uncover and continue cooking an additional 5 minutes. Stir in 1 cup soy yogurt, 1/4 teaspoon salt, and black pepper. Set aside.

  3. In a mixing bowl, stir together flour, baking powder, and remaining 1/4 teaspoon salt. Add remaining 1/4 cup soy yogurt, non-dairy milk, and oil and stir just to mix. The batter will be quite thick. Spread in a greased 9"13" baking dish. Spread the cabbage mixture evenly over the top and bake for 35 minutes.
