Cabbage, carrots, and onions baked with rice and beef broth

Recipe Ingredients for Cabbage-Carrot Casserole

2 cups chopped cabbage
3/4 cups sliced carrots
1/4 cup chopped onions
1 cup brown rice
2 cups beef broth
1/2 cup water

Recipe Directions for Cabbage-Carrot Casserole

Chop all the vegetables. Place rice in the bottom of a baking dish and top with chopped vegetables. Season with salt and pepper to taste. Combine water and beef broth and pour over vegetable rice mixture. Cover and bake at 350 for 1 hour. Serve well before serving.
