Recipe Ingredients for Cabbage and Black Bean Soup

1 cup Black Beans, dried
3 tsp Vegetable Base
1 1/2 cup, chopped Cabbage
1 cup, chopped Carrots
1/4 cup, chopped Onions
1 clove Garlic
2 stalk, medium (7-1/2" - 8" long) Celery
1 slices COOKED Center Cut Bacon
4 tbsp Cream, Sour, Cultured
1 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
2 1tsp Olive Oil

Recipe Directions for Cabbage and Black Bean Soup

  1. Day before: Soak black beans overnight. Rinse, then cook until tender (about an hour).

  2. Saute onions and garlic in olive oil.

  3. Dice all the veggies and add.

  4. Dissolve bouillon in 1 cup of hot water. Add 2-3 more cups of cold water.

  5. Cover and simmer until veggies are tender. Add cooked black beans.

  6. Top each serving with sour cream and a sprinkle of bacon crumbles. Vegetarians can omit the bacon.
