everything is labeled as it went into the pot. preparation and weighing of all the bullshit took about 2 hours.

Recipe Ingredients for cabbage, beet and lamb soup

8 cups water, 5 straight, 1.5 from arugala blanch, 1.5 from red cabbage blanch
197 g sweet onion, chopped
4 1/2 T marjoram
1 1/4 T oregano
96 g button mushrooms, cubed
65 g crimini mushrooms, cubed
170 g of broccolini, chopped
256 g blanched arugala, chopped
334 g of beets, grated
210 g of red cabbage, leaves cubed
84 g of shitake mushrooms, cubed
34 g of garlic, 7 cloves chopped
1/2 lb Lamb, Leg, Sirloin Half, cubed & seared in
1/2 T olive oil, italian
110 g red onion

Recipe Directions for cabbage, beet and lamb soup

  1. put 5 cups of water in a huge pot on medium. chopp everything into it. save the waterfrom blanching the leaf veggies to add to the mix as more is required.

  2. toss the olive oil in a frying pan on just under 3/4 heat to warm.

  3. de-fat the meat and weigh out, cutting results into equal chunks

  4. sear the meat and put on low.

  5. chop 2 .5 to 1cm thick red onion slices and toss into meat-juice.

  6. turn on just under 1/4 heat and lid.

  7. simmer at the temp it's making light bubbles for an hour, or untill meat feels tender and crushes apart under a finger tip.

  8. toss resulting mass in soup and stir.
