Recipe Ingredients for Cabbage and Beef Casserole

8 oz Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
1 medium (2-1/2" dia) Onions
3 clove Garlic
7 cup, chopped Cabbage
4 carrot (7-1/2") Carrots
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
4 pepper Peppers, Jalapeno
1 1/2 cup Rice, White, Long-grain, Regular, Cooked
28 oz Diced Tomatoes
1/4 cup, unpacked Sugars, Brown
2 fl oz White Vinegar, Distilled, Organic
1 teaspoon Thyme
3 tsp Classic Dijon Mustard
4 large whole (3" dia) Tomatoes, Red, Ripe

Recipe Directions for Cabbage and Beef Casserole

  1. Preheat over to 350. Chop onions and place along with garlic in bottom of large casserole dish that will hold at least 16 cups. Or use 2 casserole dishes.

  2. Brown ground beef in a pan, stirring to break up the meat. Remove from heat and place in large bowl with cooked rice.

  3. Slice cabbage using food processor or shred with a sharp knife. It should measure about 7 cups. Thinly slice carrots using a food processor if you like. Coarsely chop green peppers. Finely chop jalapeno peppers. Place in large bowl with rice & beef.

  4. In another bowl, stir canned tomatoes and their juice with sugar, vinegar, thyme, salt and dijon mustard until mixed. Stir into cabbage/rice mixture using a folding motion, until evenly blended. Turn into casserole dish on top of onions. Do not stir. Cover with a lid and bake in preheated oven for 1 1/2 hours. Then, stir well every half hour until cabbage is soft. Sprinkle chopped raw tomatoes on top.
