Something different from the normal colesalw - but very yummy! Serving size is about 2 cups (the first day). After the cabbage reduces down, the serving size is much smaller.

Recipe Ingredients for Cabbage Apple Coleslaw

2 medium apples
1/2 head cabbage
2 green onions
1/2 cup red pepper, diced
1 carrot
2 tbsp cider vinegar
1 tbsp lemon juice
78 grams light mayonnaise (1/3 cup)
1/3 cup Splenda
1 tbsp molasses

Recipe Directions for Cabbage Apple Coleslaw

  1. Dice all vegetable/fruit ingredients and place in large bowl.

  2. Combine cider, lemon juice, mayonnaise, Splenda, and molasses in small bowl and whisk together.

  3. Pour liquid over vegetables. Toss so all pieces are coated.
