Recipe Ingredients for Buttery Orange Soad Bread Cake

1 1/2 cups all purpose flour
2 teaspoons baking powder
1/3 cup granulated sugar
1/2 teaspoon salt
4 tablespoons unsalted butter
1 egg
1/3 cup fresh orange juice
1 teaspoon vanilla extract
1 cup golden raisins

Recipe Directions for Buttery Orange Soad Bread Cake

  1. Preheat to 425. Coat 6 inch round cake pan and line with parchment paper.

  2. In medium bowl, stir flour, baking powder, granulated sugar, and salt.

  3. Cut butter into dry ingredients until mixture is crumbly.

  4. Make well in center of mixture and add the egg, orange juice, and vanilla. Stir to make soft dough.

  5. Turn out and knead on floured surface. Knead until dough holds together, pressing in the raisins at the same time until tough is firm but not heavy or stiff.

  6. Shape into a round and cut into four wedges. Reassemble in the prepared pan.

  7. Brush top with melted butter and bake 15 to 20 minutes. Cool for 10 minutes before removing from pan.
