Recipe Ingredients for Buttery Dried Fruit Bars with Figs and Dates

8 oz dried figs, stemmed and coarsely chopped
4 oz pitted dates, chopped
3/4 cup brown sugar, firmly packed
1 tbsp lemon juice
1/2 cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
1 1/4 cup all-purpose flour
1/2 cup whole-wheat flour
1 tsp baking powder
1/4 tsp salt

Recipe Directions for Buttery Dried Fruit Bars with Figs and Dates

  1. Combine figs and dates in a heatproof bowl. In a small saucepan over medium heat, stir 1/4 cup water, 2 tbsp brown sugar and lemon juice until mixture comes to a boil. Pour over fruit, cover bowl and let stand until cool, about 1 hour. In a food processor, purée mixture, including any unabsorbed liquid, until smooth. Scrape into a bowl, cover and set aside.

  2. Using a mixer, beat butter and remaining 1/2 cup plus 2 tbsp brown sugar until smooth. Beat in egg and vanilla. In another bowl, stir together flours, baking powder and salt. Stir flour mixture into butter mixture, blending well. Divide dough and wrap each half in plastic. Refrigerate for 1 hour.

  3. Preheat oven to 375°F. Butter an 8-inch square baking pan. On a floured board, roll one portion of dough just larger than pan, about 1/4 inch thick, and trim with a knife into an 8-inch square. Fit into pan and spread fruit evenly over dough. Roll out and trim remaining piece of dough in the same way and place over fruit. Bake until golden brown on top, 20-25 minutes. Run a knife around inside edge of pan, cool completely and invert onto a cutting board. Trim a thin strip from edges, then cut into 16 bars.
