Total prep and cooking time: 1 hour I don't add as much Parmesan or margarine as the recipe calls for, but I entered the full amount to obtain the highest calorie count.

Recipe Ingredients for Butterrnut Squash Risotto

6 cups vegetable broth
1/2 stick margarine
1 large onion, chopped
1/8 tsp crushed red pepper flakes
2 1/2 cups butternut squash, peeled, seeded, and diced
2 cups arborio rice
1 tbsp chopped fresh sage
3/4 cup grated Parmesan

Recipe Directions for Butterrnut Squash Risotto

  1. Bring broth to a simmer

  2. Melt 4 tbsp of the margarine in a large heavy saucepan. Add onion and cook 10 minutes, stirring occasionally, until tender. Stir in crushed pepper and cook 1 minute.

  3. Add squash and cook 5 minutes, stirring often, until it softens slightly. Stir in rice and cook for a few minutes to toast the grains.

  4. Begin adding broth, a ladleful at a time, stirring gently until each has been absorbed. Continue stirring until rice is tender and creamy but the grains are still firm. This should take 15-20 minutes.

  5. Remove from heat and stir in remaining margarine, sage, and the Parmesan
