Thai coconut curry. Serving size about 1 cup.

Recipe Ingredients for Butternut yellow curry

9 oz tofu, cubed
3 cups butternut squash, cubed
1 tsp canola oil
1 onion, chopped
1 tsp garlic
1 tsp lemon grass
1 tsp red curry paste
1 tsp curry powder
1 cup coconut milk
1 tsp soy sauce
1 1/2 tsp sugar
1/2 cup cashews

Recipe Directions for Butternut yellow curry

  1. Heat oil in pan. Add onions, garlic and tofu, sprinkle with salt and saute to lightly brown.

  2. Push to side and in remaining pan, stir together curry paste with some of the coconut milk until mixed. Add curry powder, sugar, soy sauce and lemon grass. Stir to combine and bring to simmer.

  3. Add butternut squash cubes and cashews. Stir and cover. Simmer until squash is soft, about 30 minutes. Stir occasionally and add coconut milk as needed.
