Recipe Ingredients for Butternut sweetpotato & lentil soup (6/10/11)

700 g butternut squash
494 g sweet potato, peeled and diced
3 tbsp olive oil
100 g lentils
140 g Frozen Onions
1/2 tsp cinnamon
1/2 tsp chilli powder
2 Vegetable Stock Cubes , disolved in
1500 ml water

Recipe Directions for Butternut sweetpotato & lentil soup (6/10/11)

  1. quarter and de-seed the butternut squash, place on a baking tray and rub with 1tbsp olive oil, cinnamon and chilli powder, roast in a pre-heated oven until tender, remove and allow to cool.

  2. Meanwhile saute the onion in the remaining olive oil for a few minutes then add the diced sweet potato and lentils stir until all is coated in oil.

  3. Add the prepared stock and bring to the boil, reduce heat and simmer until the potatoes and lentils are soft. Remove from heat.

  4. Scoop the flesh from the butternut squash and add to the broth.

  5. Liquidise in batches and return to the pan.

  6. Add a little water if the soup is to thick and season with black pepper,chilli pepper and cinnamon if required.

  7. Either heat gently or portion into indivudual servings and freeze for later.
