Yummy homemade butternut squash soup. Very filling for a lunch or a dinner.

Recipe Ingredients for Butternut Sqush Soup

4 cups butternut squash
8 cloves garlic
300 g sweet potatoes
2 cans chicken broth
1 tablespoon butter
1/4 cup 2% milk
2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 tablespoon brown sugar

Recipe Directions for Butternut Sqush Soup

  1. Cut butternut squash in half and scoop out seeds.

  2. Stab both sides with a knife and place on baking sheet

  3. Cut the top off the head of garlic and wrap with tin foil, place on baking sheet.

  4. Bake the squash and garlic in the oven at 375 for about 1.5 hours

  5. Meanwhile peel and cut potatoes and boil until soft, then mash roughly.

  6. When the squash and garlic is done, scoop out the flex from the sqush and squeeze the garlic into the pot.

  7. Using a hand blender mix the potatoes, squash, garlic and chicken broth together until smooth.

  8. Add the butter, milk, curry, brown sugar, salt and pepper and stir.

  9. Heat through on stove top till hot.
