Vegetable fritters similar to latke. Traditional ukoy has prawns, but skipping due to allergies.

Recipe Ingredients for Butternut Squash Ukoy

4 cups butternut squash
1 onion, chopped
1 egg
1/2 cup brown rice flour
1/4 cup cornstarch
1/4 cup water
1/2 teaspoon kosher salt
1 pepper to taste

Recipe Directions for Butternut Squash Ukoy

  1. Wash, peel, slice, then julienne butternut squash.

  2. In a medium bowl mix all ingredients.

  3. Heat oil in wok or skillet. Fry ukoy: 1/4 cup batter per fritter.

  4. Serve with vinegar/garlic dipping sauce.

  5. Please note that you may also bake ukoy at 375F for 15 minutes. Turn then bake for 7 more.
