Creamy buttnernut squash soup with lean turkey meat for protein. Probably would add less water next time, 10 cups intead of 14. Made 5544 grams for 10 servings of 555 grams/serving.

Recipe Ingredients for Butternut Squash & Turkey Soup

1494 grams Squash, Winter, Butternut
2 grams Salt, Table
2 grams Salt Substitute
34 grams Olive Oil
649 grams Onions
35 oz Fresh Ground Turkey - Lean
471 grams Cream, Fluid, Heavy Whipping
14 cup (8 fl oz) Water
174 grams Garlic

Recipe Directions for Butternut Squash & Turkey Soup

  1. Garlic - Peel and roast with Butternut squash

  2. Butternut Squash - Peel, clean out the seeds, chop into 1 inch squares or so. Place on cookie sheet with garlic.

  3. Drizzle squash and garlic with 22 grams of olive oil, salt, and salt substitute. Use a spatula to flip the vegetables around a little to coat with olive oil.

  4. Bake for 20 minutes at 350. Use the same spatula to flip things around, move the edges towards the center and the center towards the edges. Repeat for a total of 60 minutes roasted, or you can go more if you want.

  5. Sautee the peeled and chopped onions in 12 grams of olive oil with the ground turkey. Add pepper.

  6. After turkey is cooked, add water and bring to boil, then simmer.

  7. After vegetables are roasted, add to turkey and onions. Simmer for 30 minutes.

  8. I allowed the soup to cool overnight and then scooped out the squash and put the squash through the blender with enough liquid to blenderize easily. Some turkey did get blendered.

  9. After most of the squash was blendered and added back to the soup I added a pint of heavy cream.

  10. Share and enjoy!
