Butternut Squash, tofu, wild rice

Recipe Ingredients for Butternut Squash, Tofu, Wild Rice

2 cups wild rice (or blend)
4 cups water
8 cups butternut squash, peeled, cubed
28 ounces tofu, cubed
1 teaspoon salt
1 tablespoon sage, fresh, chopped

Recipe Directions for Butternut Squash, Tofu, Wild Rice

Preheat oven to 375 F. In separate pan, make wild rice (or blend). Bring water and rice to boil, then simmer for 20-30 min until tender and liquid absorbed. Set aside. In 13 x 9 inch (or 15 x 10 inch) glass baking dish, combine rice, tofu, butternut squash, sage, and salt. Bake at 375 for 45-50 min until squash is tender.
