Recipe Ingredients for Butternut Squash and Three-Cheese Mac

16 ounce whole wheat macaroni
2 teaspoon butter
1 teaspoon vegetable oil
3 tablespoon flour
1 1/2 cup low sodium chicken broth
10 ounce (283 grams) frozen butternut squash
1 cup 1% milk
1 1/2 cups Fontina cheese, shredded
1 cup Cheddar cheese, shredded
1/2 cups Parmesan cheese, grated
1/4 teaspoon nutmeg, ground
1/4 teaspoons white pepper
1/4 teaspoon cumin, ground
1/4 cup Kellog packaged stuffing mix

Recipe Directions for Butternut Squash and Three-Cheese Mac

  1. Preheat oven to 400F. Mist a 9? x 13? baking dish with cooking spray. Cook pasta according to package directions; drain and set aside.

  2. Melt butter with oil in a 3-quart saucepan over medium heat. Stir in flour and cook 2 minutes, until thick. Gradually add broth, whisking until smooth. Stir in squash and milk; cook, stirring, until thickened and smooth. Add cheeses and spices, reserving 1/4 cup Parmesan for topping. Stir until cheese is melted.
