Thai flavored Butternut Squash Soup.

Recipe Ingredients for Butternut Squash Thai Soup

32 oz Squash, Winter, Butternut
6 clove Garlic
2 large Onions
1 1tsp Olive Oil
3 serving Lite Coconut Milk
3 serving Simmer Sauce
32 oz Natural Foods - Organic Chicken Broth

Recipe Directions for Butternut Squash Thai Soup

  1. Cut Butternut Squash into 8 pieces, discard seeds.

  2. Peel Garlic, Peel and 1/4 the Onions.

  3. Coat all the above with olive oil by placing in ziploc with oil and shaking, may take 3 loads.

  4. Bake all oil coated vegetables in the oven at 350. Pull out onions and garlic after 30 minutes. Pull out Squash when it is soft.

  5. Let vegetables cool enough to be handled, peel the squash.

  6. Process everything in a food processor, adding broth as needed.

  7. Add simmer sauce, coconut milk, remaining broth, processed vegetables to a large pot and bring to a boil, then simmer for 30 minutes.

  8. Add cayanne pepper to taste.

  9. My soup came out to be around 2878 grams or so, 400 grams/serving for about 7 servings. Enjoy!
