Great soup that warm's you up on a cold wintery day

Recipe Ingredients for Butternut Squash and Sweet Potato Soup

200 grams Squash, Winter, Butternut
2 medium Sweetpotato
3 stalk, medium (7-1/2" - 8" long) Celery
1 medium raw Onion Red
1 large (7-1/4" to 8-1/2" long) Carrots
1 tbsp chopped Shallots
3 Serving Chicken Concentrated Stock

Recipe Directions for Butternut Squash and Sweet Potato Soup

  1. Saute garlic and onion until soft add the rest of the cut up vegetables

  2. Heat on the pan for a couple of minutes then add stock I' use Chicken but Vegetable stock is fine until the mixture is well covered

  3. When the veg is cooked through take off the head and with a handheld mixer mix it all.

  4. Put back on heat for a few minutes and serve with any type of bread you like

  5. Season to personal taste with salt and pepper or fresh herbs
