Butternut squash and sweet potato soup

Recipe Ingredients for Butternut squash and sweet potato soup

2 lb butternut squash
300 g sweet potato
1 tbsp butter
1 tbsp olive oil
1/4 onion
1/2 tsp nutmeg
1/2 tsp cinnamon

Recipe Directions for Butternut squash and sweet potato soup

  1. Roast squash and sweet potato in oven at 400 F for 1 one hour.

  2. Peel and chop squash and sweet potato.

  3. Fry onions and ginger in butter.

  4. Add chopped squash and potato mix.

  5. Add one tbsp olive oil and fry well.

  6. Add chicken broth or water and milk and stir well.

  7. Add nutmeg, cinnamon, salt and pepper and simmer for 20 mins.

  8. Mix in sour cream.

  9. Puree soup in a blender or foood processor till free of lumps.

  10. Serve hot.
