Recipe Ingredients for Butternut Squash and Sweet Potato Mash

4 cup cubes Butternut Squash
1.66 cup Yams
3 dash Salt, Table

Recipe Directions for Butternut Squash and Sweet Potato Mash

  1. Pierce the rind of the whole butternut squash and microwave 2-3 minutes for each pound until the skin is tender

  2. Let sit for 5-10 minutes

  3. Preheat oven to 350 and place whole squash in a dish to roast for 1 hour

  4. Remove squash and carefully slice open (watch out for steam)

  5. Scoop out seeds and throw away

  6. Remove squash from skin and mash with the drained sweet potatoes

  7. (If you wanted to use plain sweet potatoes I would suggest either adding brown sugar to make it sweet, if you like sweetness, or add a little butter and salt to emphasize the savory aspect)
