This is delish! Makes a large amount and will keep for a week. Continue to add more water/or homemade vegetable broth as it cooks. This would be good over quinoa or brown rice

Recipe Ingredients for Butternut squash, sweet potato curry stew

1 cup onion, raw
1 cup chopped carrot
2 zuchini
1 red pepper
1 yellow pepper
1 teaspoon bottled minced garlic
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon ground ginger
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground red pepper
1 1/2 cups water
1 tablespoons tomato paste, no salt added
15 ounce diced tomatoes, no salt added fire roasted
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lemon juice
2 Sweet Potato
3 cups eggplant
3 cups cauliflower
2 cups butternut squash

Recipe Directions for Butternut squash, sweet potato curry stew

  1. sautee onions and carrots and celery , add garlic, add spices, add sweet potatoes and squash, add rest, bring to boil, simmer for 45 minutes, check water level.

  2. Add lemon juice and cilantro prior to serving and top with a tbs of greek yogurt and a bit of fresh cilantro
