2 tablespoons butter
1 large onion, chopped
3 cloves garlic, pressed
2 teaspoons chopped fresh ginger
1/2 teaspoon cumin
1/4 teaspoon black pepper
2 winter squash
1 quart of chicken stock
2 tablespoons tomato paste
1 tablespoon fresh lemon juice

Recipe Directions for Butternut Squash Soup Recipe

  1. Heat butter. Add onion, garlic, ginger, cumin, pepper.

  2. Add the rest of the ingredients and cook til soft - 30-40 minutes.

  3. Mix in a blender or use an immersion blender
