Recipe Ingredients for Butternut squash soup

4 oz Squash, Winter, Butternut
1 tbsp+chopped Shallot
1 tsp Butter
2 oz Carrot, grated
1/4 tsp ground Ginger
1 dash Cayenne Pepper
1 cup Vegetable Broth

Recipe Directions for Butternut squash soup

Prepare squash by peeling and dicing. Put the shallot or onion in a saucepan with the butter and saute until clear. Add the prepared squash and remaining ingredients in the saucepan and bring to a boil cook covered until squash is tender, about 8-10 minutes. Either serve as is or blend with an immersion blender until smooth. Adjust for salt.
