6 cups chicken stock 1 tsp butter 1/2 onion 1 butternut squash, peeled and cubed

Recipe Directions for butternut squash soup

saute 1/2 minced onion in butter until translucent. Pour in chicken stock. Boil squash in stock until it is tender. Transfer squash to a blender using a slotted spoon, blend until smooth. Transfer pureed squash back into stock and let simmer. Add a dash of nutmeg (optional).
