Ingredients (Makes 4 servings) 2 cups squash, butternut 2 cups chicken broth, low sodium 1 cup milk, whole 1/2 teaspoon salt 1/8 teaspoon nutmeg

2 cups Squash, Summer, Zucchini, Includes Skin
2 cups Soup, Chicken Broth
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 teaspoon Salt, Table
1 teaspoon Nutmeg, Ground

Recipe Directions for Butternut Squash Soup

  1. Directions

  2. 1. Peel and dice the squash to yield 2 cups

  3. 2. put into a soup pot with the broth and cook for 30 minutes.

  4. 3. Puree in a food processor or blender and return to the pot

  5. 4. Stir in the milk and heat to serving temperature (do not boil after adding milk)

  6. 5. Taste and season

  7. 6. Serve with a little grated nutmeg on top of each bowl
