Butternut Squash Soup Recipe

Easy soup, full of flavor and goodies. Worth the extra effort of baking the squash, but squash can be prepared in pan w/ other veggies. Buttermilk is also optional.

Recipe Ingredients for Butternut Squash Soup

40 oz Squash, Winter, Butternut
1 cup chopped raw Vidalia Onion
15 medium Carrots, Baby
0.5 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
4 serving Progresso unsalted chicken broth

Recipe Directions for Butternut Squash Soup

  1. Halve or quarter squash. Brush with olive oil or melted butter, season with a pinch of salt and bake for 45min. in a 400F oven.

  2. While squash bakes, dice onion and carrots. Saute in ~1T of olive oil in a dutch oven or large pot until onions become translucent.

  3. Add entire contents of 32oz container of chicken broth or 4cups of homemade stock.

  4. Simmer on low until squash is done.

  5. Remove skin from slightly cooled squash, divide flesh into coarse chunks and add to broth mixture. Remove from heat.

  6. Cool for 10-20 minutes (depending on blender durability) and add mixture to food processor or blender and puree into a smooth slurry.

  7. If desired add buttermilk to desired consistency/smoothness and further blend.

  8. Serve warm.
