Makes 1 serving



Makes about 3 cups. NO fat. I baked one small butternut squash after quartering it and scooped the pulp out netting about two cups. Normally I would have used fresh ginger, but I didn't have any and so I used a couple of pieces of candied ginger and will add those calories to the log separately.

Recipe Ingredients for Butternut Squash Soup

0.5 cup, sliced Onions
1 clove Garlic

Recipe Directions for Butternut Squash Soup

  1. Finely chop the onion about 1/4 to 1/2 cup and saute in Pam. Press one clove of garlic and add to the onion. And then add the ginger.

  2. Cook for about 1 or 2 minutes, add one cup water.

  3. Add low sodium chicken broth (I use TJ concentrate).

  4. Add the cooked butternut squash. Heat through.

  5. Blend with immersion blender. Heat through. Serve.
