Really simple quick to make Butternut Squash Soup recipe - anything can be added to it, low in calories and VERY filling. You can add more chicken broth if it's too thick and use light or no sour cream - very versatile - just made it for the first time, super yummy!

Recipe Ingredients for Butternut Squash Soup

20 oz Squash, Winter, Butternut
8 oz Carrots, Baby
20 oz Chicken Broth
4 oz Sour Cream

Recipe Directions for Butternut Squash Soup

  1. 2 whole butternut squashes cubed

  2. 2 carrots or 1 cup diced baby carrots

  3. 2 cans (14.5oz) chicken broth

  4. 1 cup water

  5. 1/2 tsp pepper

  6. 1/8 tsp nutmeg

  7. 1/2 c. sour cream

  8. add carrots and squash in a large put - add water and chicken broth and boil on medium high heat then reduce to simmer on medium low heat for 10 minutes - slowly blend in sour cream and spices

  9. you can add in terragon or cumin, anything you like to taste, onions and potato as well -
