Butternut Squash Soup Recipe

SO delicious- it tastes like there is cheese in it - use a 5lb squash- if you want a smaller batch use a smaller squash and just adjust the water accordingly and do everything else the same.

Recipe Ingredients for Butternut Squash Soup


Stock:
8 cups water
1 squash guts
1 large onion
1 tsp olive oil
10 cups butternut squash, peeled and cubed
1 large onion, chopped
1 tablespoon olive oil
1/2 tsp ground nutmeg
1 tablespoon fresh thyme
1/2 cup almond breeze (or milk or cream)
1 salt and pepper to taste

Recipe Directions for Butternut Squash Soup

  1. Stock:

  2. in med-large pot saute one onion and squash guts (trust me) in 1tsp oil for 2 mins

  3. add 8 cups h20 (less if using less than 10 cups squash)

  4. bring to a boil then simmer for at least 1/2 hr

  5. strain and reserve

  6. soup:

  7. in a large pot, saute diced onion in tb olive oil til niiice.

  8. add squash, thyme nutmeg and stir around for a minute.

  9. add stock (and extra water to cover squash by about an inch)

  10. bring to boil and simmer for 20 mins or til squash is tenderrrrr

  11. puree soup (use a hand immersion blender right in the pot or use a blender in batches and put back into pot)

  12. add 1/2 cup of milk and season with salt and pep! i use lotsa salt cuz its such a ginormous squash ;)

  13. this soup was only 6 dollars to make (cheeper in wintertime) and it is srsly HUGE amounts. 1 serving = a big bowl
