Recipe Ingredients for Butternut squash soup

1 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
1 medium raw Onion Yellow
4 stalk, medium (7-1/2" - 8" long) Celery
2 medium raw Leeks
1 tbsp(15 g) Extra Virgin Olive Oil
4 medium Carrots
2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
8 cup, cubes Squash, Winter, Butternut

Recipe Directions for Butternut squash soup

  1. saute onion and celery together until soft

  2. add veg stock and approx 2-4 cups of water and bring to a boil

  3. add all other vegetables

  4. cook until all vegetables are soft and take off heat

  5. run the cooked soup through a food processor or blender in sections and add pieces of cream cheese with each section

  6. return pureed soup to pot and keep on low heat and add milk

  7. add cinnamon, nutmeg, cayenne pepper, black pepper and any other spices you would prefer

  8. please be warned that this recipe yields about 30 servings so make sure you have some freezer safe containers to save the extra in!
